Here is what I posted back in January I wanted to accomplish by NEXT January....
So in 2012 I would like to accomplish these tasks!
1) Wear and Fit into XL T-Shirts (went from 3XL to 2XL so far)
2) Finish Tough Mudder (Sunday, March 17th 2012)
3) Run 15 Miles without walking (currently at 4 miles)
4) Walk into a store and purchase jeans (AE only Carries up to size 38 in stores, currently 42)
5) Stay Determined and Motivated

I currently am between 2xl and Xl shirts already. The shirt I have on today was from 2001 back when I was a JR at good ole WIU. We won the shirts by whooping up and winning flag football intramurals!!!! It is an XL and I have not worn this shirt since 2002 because it didn't fit anymore. I blame the open cafeteria at wiu and no self control! I can not belive I put the shirt on and it fits now its a great feeling.
2) Finish Tough Mudder (Sunday, March 17th 2012)
Well well well look is what is coming up this weekend! This will be a true test and I will have the determination to finish!!!
3) Run 15 Miles without walking (currently at 4 miles)
Well I am not going to lie this one took a back seat when I got injured. I was hurt for a month and could not run and then started up Insanity so running took a back seat. I am praying to make it thru warrior and tough mudder this weekend then start running back up. So its down but not dead yet. I went for a job and got my 4 miles in with no walking so while on life support I have not pulled the plug yet!!!!!
4) Walk into a store and purchase jeans (AE only Carries up to size 38 in stores, currently 42)
I am sitting at around a 40 in jeans. Not bad but still can not walk into AE and buy some. I am hoping to walk into a store before the year is over!!!
5) Stay Determined and Motivated
This has been pretty easy so far 6 months in! My gym routine has taken a dive as I have not been to the gym in over 6 weeks but have kept losing weight and started INSANITY. You know the video with Shawn T telling you to push it and total cardio nightmare! Yes I decided to go all out and give it a try. LOVE IT. Alison has me working out in the garage due to the amount of sweat this workout entails! But I love it out in the garage at 5:00 AM. It's nice to have the cross wind from the 2 doors and is not air conditioned so I can get that much more sweat built up. I have decided that next week I am going to start going back to the gym on Wednesday - Friday after work. That leaves me to insanity in the morning and weights/running in the evenings. I am starting to tell a HUGE difference in my appearance from just 11 months ago. Even in just the last 6 weeks!!!! Stomach is much flatter, actually can see triceps and biceps definition in my arms. I can even start to tell there is muscle under that stomach of mine! Energy level is a lot higher also.
Weight Watches has kept me on track and motivated as well. Seeing 235 lbs is a great sight to see. When I stepped on that scale 11 months ago and seen 301 I knew I had to change! There would be nights I would lay in bed and be short of breath or run in softball and feel like my airways were closing. The worst I have ever felt in my life! Sometimes it felt like someone was sitting on my chest and I just couldn't breath like a normal person could. It was a feeling of not getting enough breath. But the big eye awaking thing was seeing the 301. I mean that was it. Just standing there thinking what did I let happen to myself was all the motivation I needed. Put that feeling with wanting to start a family and it will make anyone want to get in better shape. I am 11 months into this year long transformation and 6 months into the new year and I am not going to slow down!!!
I want to add a goal for these next 6 months!
6) Be a fit 200 lbs by Christmas thats a total of 101 lbs in a year and half!!!!

Grilled Potatoes
Servings: 2
Size: 1 potato
Points+: 4 pts
Ingredients:
2 (13 oz total) medium russet potatoes, washed
2 tsp olive oil
sea salt and fresh cracked pepper
Directions:
Preheat grill to medium-high heat (an indoor grill would work too).
Cut potatoes into 1/4-inch thick slices. I used a fancy crinkle knife with ridges but straight cuts are fine. Toss the potatoes with olive oil. Add salt, and pepper to your taste.
Reduce heat on the grill to medium and lay the potatoes slices straight onto the grill; close the lid. Cook until the potatoes are golden on one side, about 6 to 10 minutes, making sure they don't burn and adjusting flame accordingly. Turn and cook until tender inside when pierced with a fork, but slightly crisp and golden brown on the outside. Remove from grill, and serve immediately.
